Baked Avocado, Eggs & Black Combe Ham

Ingredients: 

Black Combe Ham
2 medium eggs
2 medium size avocado cut in half
Salt & pepper to taste

Method:

  1. Preheat oven at 220 C.
  2. Slice the avocados in half and remove the seed. Place avocado onto a baking tray. Loosely roll the ham and place it into the hole of the avocado. Crack the egg into the centre of the rolled ham and season with salt & pepper to taste.
  3. Place the baking dish in the preheated oven, bake until eggs are cooked (about 15 mins).
