Dates stuffed with blue cheese and wrapped in Smoked Pancetta

Serves: 2

8 dates 
120g Yorkshire Blue cheese divided into 6 pieces 
Freshly ground black pepper
Olive oil
12 rashers Smoked Pancetta 
Balsamic vinegar



  1. Preheat the oven to 200C/400F/Gas 6.
  2. Make a slice in the top of each date and stuff with a piece of Yorkshire Blue. Season with freshly ground black pepper.
  3. Wrap each date with two rashers of Smoked Pancetta, secure with a cocktail stick and place in an ovenproof dish. Drizzle with olive oil and cook for 10-12 minutes until the Pancetta is nicely cooked.
  4. Place the Pancetta-wrapped dates onto a plate, remove the cocktail sticks and drizzle with balsamic vinegar. Serve with crusty bread and a few mixed leaves.
